So Many Apples, So Little Time

I often, mistakenly order groceries that I don’t need. Rather than actually walking to my fridge or to the cupboard to check on my supplies, I’ll go ahead and buy something thinking I need it, or at least will need it soon. Every couple of months this behavior gets me in a bind when I realize I have too much of something that is going to ruin if I don’t use it right away.

I’ve been caught again, this time with apples. In my quest to eat more fruit, I’ve been buying way too many apples each time I get groceries. Yesterday I discovered that I had about 12 apples in my fridge. Yikes!

I immediately jumped on the web looking for apple recipes and since I’ve been trying to improve my baking skills, my search turned to desserts. This is how I found the recipe for Apple Brownies on AllRecipes.com.

Of my recent baking adventures, this was by far the easiest recipe to date. I didn’t even have to break out any fancy equipment except for maybe my OXO Apple Corer and Divider. (I love that thing!) I whipped up a batch of these brownies and in no time, my apartment smelled like grandma’s house during the holidays.

These little babies were heavenly! I had originally thought I’d take some to work because we’d never eat them all, but I’ve had a change of heart. These brownies are moist and just down right yummy.

Try out the recipe. The only thing I did differently was to dice the apples like some other reviewers mentioned. With them diced, you get a nice moist apple bit in every bite.
