Some Old Favorites

As you can imagine, I’ve collected quite a few recipes since I created this blog. I have a shelf full of cookbooks tagged with post-it notes and a binder full of recipes I’ve found online or torn out of magazines. There are also a few of my own scrawled out on notebook paper. While preparing my latest grocery list, I decided to revisit my binder. It didn’t take me long to pull out five recipes I wanted to try again. I purchased ingredients for several easy, delicious dinners including this Spaghetti with Asparagus, Smoked Mozzarella and Prosciutto from the one and only Giada DeLaurentiis. In my opinion, the Food Network doesn’t show enough of her. They should seriously take away a show or two from Rachel Ray and free up some space for the real cooks. Wow – I just totally talked trash on Rachel Ray! Oh well, I’ve tried her stuff and it just doesn’t measure up.
One of the reasons I like Giada so much is that, even though her recipes use simple and minimal ingredients, they come out tasting like a million bucks. Every time I watch Everyday Italian, my mind starts buzzing with ideas. Yes, she gives almost every dish an Italian flare, but come on! That’s not a bad thing.
I dare say this recipe is easy enough for even Michael to make. I’ll admit I did make two minor adjustments though. I have made this recipe word for word once and it was terrific. However this time, I used frozen asparagus spears. I skipped the step where you boil the asapargus and just sauteed it in the olive oil and garlic. Also, I decided to use farfelle pasta. I just think with all the goody bits of mozarella and procsiutto, this pasta works better. I don’t see how anyone wouldn’t think this was a great dish. I know Michael wouldn’t stop talking about it!
