Welcome Home BBQ

Michael had been in LA for work since last Thursday, but he finally came home today! In honor of my man coming back to the East coast, I decided to make him a little treat that was clearly not LA or NYC fare. I surprised him with BBQ Beef sandwiches, corn on the cob and a cucumber salad. The first words out of his mouth when he walked in the door was, “What’s that smell?”, but in the totally good way. His smile was unmistakable.
I took a two and half pound chuck roast and threw it in the crock pot with two cans of beef broth, one whole bottle of BBQ sauce, one cup of water, one onion, garlic powder, a little crushed red pepper, and salt & pepper. I put everything together Sunday night and left it in the fridge to marinade until this morning when I put the crock pot on low and headed off to work. What Michael and I both came home to was the most tender beef roast I’ve had in a long, long time.
We’re both fat and happy tonight!
