Olé for Thursday

I think Thursday is my favorite day of the week because it’s such a tease before the weekend. There’s a mixture of anticipation and satisfaction I feel on Thursday nights. It’s almost the end of the workweek and the weekend is just off in the distance, so close I can see it on the horizon. Plus, the TV rocks on Thursdays! (30 Rock, The Office and Lost right in a row!!)

Since our horrible meal of nasty tacos earlier this week, I’ve been thinking about Mexican food and patiently waiting for my new cookbook to arrive. We had breakfast for dinner one night last week and I had mixed in this great black bean salsa with my scrambled eggs and ever since then I’ve been thinking about eggs and beans. Then it hit me – Huevos Rancheros. Of course, I knew I didn’t have all of the ingredients I would need, but I figured I could substitute tortilla chips for tortillas and black beans for refried beans. I used this recipe as a base to get a feel for the dish and came up with my own simple version. It rocked and hit the spot!

Simple Huevos Rancheros

1 can of black beans
1 tbsp minced garlic
1 tsp ground cumin
½ tsp red pepper flakes
4 eggs
½ cup shredded cheddar cheese
2 handfuls tortilla chips
Salsa
1 tbsp olive oil
Salt & Pepper to taste

Heat the olive oil in a saucepan and add the minced garlic. Cook the garlic until golden and then add in the black beans. Add the cumin, red pepper flakes, and salt and pepper. (You can add as much red pepper as you like depending on how spicy you like it.) While the beans come to a simmer on low heat, cook the eggs in a separate frying pan. The eggs can be cooked to your liking, but soft yolks are best for this dish. Once the eggs are done, mash the beans with a potato masher and remove from the heat.

To assemble a plate, first layout the tortilla chips and then top with half of the bean mixture. Next add half of the shredded cheese and top with two of the eggs. Sprinkle with as much salsa as you like.

Makes two servings.
