G-Man’s Salsa

I’ve naming this salsa in honor of my husband since he is the salsa connoisseur around here. He goes through at least a jar of salsa and one bag of Tostitos a week! So this is for him and to pay homage to the delicious tomatoes he’s grown this year. In this recipe, I used lemon juice simply because I had it. Lime juice would work well too. I also like my salsa to be well blended, but you can make it as chunky as you want. The salsa will be ready to eat straight out of the food processor, but if you can wait a few hours, the flavors will be even better once they’ve had time to mingle. Leave the seeds of the jalapeño in tact if you really want to spice things up!
4 medium tomatoes
½ half a medium sized, yellow onion
2 large jalapeño peppers, seeded
½ cup fresh cilantro
3 cloves of garlic, roughly chopped
3 tbsp lemon juice
Dash of Salt & Pepper to taste
Cut off the tops and bottoms of the tomatoes and then slice each into quarters. Take the half onion and jalapeño peppers and do the same. Throw the vegetables and remaining ingredients into a food processor. Pulse the mixture until you reach the desired consistency for the salsa. Pour the mixture into a container with a tight lid such as an empty jar and place in the refrigerator.
Makes about four cups of salsa.
